Extremely rich with a predominant sweet flavor which is reminiscent of raisins, figs and dates complimented with romas of honey, honey syrup, and candied fruit. Wine tannin: medium-high; this 12 year aged in American Oak barrels Pedro Ximenez balsamic wine vinegar is an incredible addition to marinades and glazes for grilled meats or to balance out Olivar SANTAMARIA premium extra virgin olive oils in dressings and vinaigrettes.

Khayyan Palomino white grape varietal sherry vinegar with 7° acidity from Sanlúcar de Barrameda (Cádiz), Spain exhibits dry, rich nutty undertones with slightly sweetness. Wine tannin: low - medium; this sherry complements raw shell fish as a mignonette, often used as meat marinade, salads and sauces.

Our mushroom proves to be most popular for its texture, delicate flavor and versatility.  Picked small, when it is white and shaped as a button, it grows to be a Portobello mushroom feeding directly from the earth taking all the Spanish terroir has to offer, giving it the earthy taste popular in global gastronomy.  An excellent ingredient for tapas, stews, salads, soups, pizzas, sandwiches, sauces, sautéing and perfect for grilling whole.

Champiñon Mushroom

Our whole Piquillo peppers are, native to the rural village of Lodosa in Navarra.  Often referred to as the "red gold" of Lodosa. Picked whole and fire-roasted, hand-peeled and packed in their own juices at our plant in Rioja.  Intense red color, sweet and tangy, soft to the palate with a smoky after taste it is an excellent stuffing pepper for savory meats, fish and cheeses. Also, chop or slice for sandwiches and salads, or simply use sliced as a simple tapas with a little salt and pepper puréeing with olive oil and spices for a quick dip or sauce.
