






A UNIQUE COOKING FLAVOR...
Oloroso never develops flor. Instead, all the flavor in these wines comes from the interaction of wine and air. Usually oxidized wine is considered faulty, but when left for five to twenty-five years, the wine in a Sherry solera will develop into a full-bodied, dark and expressive substance that begs to be enjoyed with braised beef, bitter chocolate, and bleu cheese. Oloroso Sherry is aromatic and spicy, and can drink like a finely aged bourbon.

Sherry wines are the result of 3,000 years of Spanish culture. The earliest origins of Sherry dates back to the Phoenicians in 1100 B.C. The Phoenicians were a nation of traders based in modern day Lebanon who are believed to have brought the very first wine presses to Spain, where they founded a city called Xera, now called Jerez.
Over centuries, Greeks, Carthaginians, and Romans occupied the region.
The Roman shipped sherry wines across their vast Empire at the height of their reign.
This system is essentially a blending system of casks that hold wines of different ages. The oldest casks of Sherry are the ones that are bottled in a given year and the next casks are arranged in such a way that the youngest Sherries are blended into a series of casks holding progressively older Sherries. The blending off of younger Sherry into older Sherry results in very consistent, high-quality wines that all share a portion (albeit small) of the oldest, original vintage of Sherry made at the bodega. Sherries do not have a vintage date, per se, as they are really a blend of many years.
